A good friend recently made a long anticipated move to NYC. His girlfriend decided that this was the perfect opportunity for a surprise "Welcome to NYC...finally" party. She knew immediately that the theme was going to be all things New York. When I found this out, I instantly knew I wanted to make some sort of cupcakes that fit in this theme because hello...a party isn't a party until there are cupcakes! But, what can you take thats NYC themed that can be transformed from a circular canvas? After racking my brain for hours, I was riding the subway and looked up from the crossword puzzle only to realize the answer was staring me right in the face (literally I was looking right at the round 4 train logo that I see everyday). Aha! I frosted the cupcake surfaces as smoothly as I could and then used the flat part of a butter knife to smooth out and flatten the piped on number. I found that putting a little confectioner's sugar on the knife helped smooth it down without it sticking to the knife.
